Briksha's Receipe of the Month:
Mung Bean Salad
For 5-7 serving
2 cups of Sprouted mung beans
1/2 cup chopped red cabbage
1/2 cup pickled cucumber or any veggie mix
2 Tbs-a cup kimchee (optional)
1/2-1 cups dehydrated spicy sunflower and /or pumpkin seeds
1/2-1cup chopped greens like Arugula, Kale, spinach
2 Tbs minced watercress (optional)
2 Tbs cup minced red and green onion
Juice of 1/4 lemon
1/4t salt or to taste
1/8 t black pepper or taste
1 Tbs cup sesame oil (optional)
Mix all ingredients and enjoy with or without cilantro chutney
* To makespicy dehydrated sunflower/pumpkin seed mix:
Take 2 cup soaked sunflower/pumpkin seed for 4-6hrs. Mix I t salt, I t curry, I t cumin, juice of ½ lemon, pinch of cayenne and black pepper and dehydrate for 6 to 10 hrs until it become crunchy.
